Jello Cookies


These colorful cookies are so simple and perfect for Easter.  Believe it or not, these tasty treats are made with Jello.  The ones pictured below are Berry Blue and Cherry.  Next week I think I will try Lime and Orange! 

Be careful not to brown the cookies--I did on the first batch of the blue ones which made them look a bit green around the bottoms.

I made a couple adjustments to the recipe as follows: 
  • Reduced the powdered sugar in the dough to 3/4 cup
  • Added 2 TBSP milk in dough to help it stick together
  • I found 9 minutes to be the perfect cooking time for my oven
  • For Cherry cookies- I swapped Almond Extract for Vanilla Extract in the glaze.
